Our belief is that animals raised outdoors, on high quality pasture, and that are treated with respect, produce the most nutritionally-dense and best tasting meats. All of our meats are hormone and antibiotic free and our animals are never exposed to herbicides or pesticides, producing clean, fresh, lean meats that you can be confident about serving to your family.

| Pepper Braised Pork Belly |
Ingredients
- Pork Belly, trimmed, portioned into 4 oz pieces
- Salt
- Olive Oil
- 3 Celery Ribs, coarsely chopped
- 5 Carrots, coarsely chopped
- 2 Onions, coarsely chopped
- 1 cup Brown Sugar
- 9 Whole black peppercorns
- 1/4 tsp. Freshly Grated nutmeg
- 2 to 3 qts. Chicken stock
- Freshly Ground pepper to taste
- 3 to 4 gloves minced fresh garlic
- 2 to 3 fresh tomatoes, chopped
Directions
- Score fatty side of belly pieces. Season belly with salt; brown with oil in braising pan. Remove from pan
- Add Celery, carrots and onions to pan; caramelize. Stir in brown sugar, peppercorns and nutmeg; cook until sauce reaches syrup consistency
- Return belly to pan. Deglaze with chicken stock; cover pan tightly and bake at 325F for 2 to 3 hours until meat is tender.
